11 Best Clay Pot Recipes For When You’re In A Hurry

If you are anything like me then you’re always on the go! As a working mom, I don’t always have the luxury of time and I can’t spend hours in the kitchen preparing a meal. Let me re-phrase, I can spend hours in the kitchen but then my kids would probably be smelly tech zombies and dirty laundry will get so out of control I would contemplate throwing it all away.

That’s where these best clay pot recipes come in. These recipes are simple and easy to follow, and they will leave you feeling satisfied, happy, and accomplished. In this blog post, we will discuss some of my personal favorite clay pot recipes that are perfect for the busy home cook! 

Note – the portion sizes in these recipes are for 4 people. Assuming you know the difference between a glazed and unglazed clay cooking pot, let’s jump right into it.

RECIPES FOR UNGLAZED CLAY POT COOKING

Chicken and Rice Soup Recipe

A perfectly cooked chicken and rice soup recipe using a clay pot.

Ingredients

  • 4 chicken breasts, skinless and boneless
  • 1 x chopped or shredded onion
  • 2 x diced celery sticks
  • 2 x grated or chopped carrots
  • 2 x smashed garlic cloves
  • 1 x tablespoon grated ginger root
  • 1.5 cups x raw basmati rice
  • 1 cup x vegetable broth or chicken broth
  • salt and pepper to taste

Instructions

  1. In a medium glazed clay cooking pot, sauté chicken breasts in olive oil over medium-high heat until golden brown (lightly season chicken for extra flavor). Remove chicken from pot and set aside.
  2. To the same pot, add onion, celery, carrots, garlic cloves, ginger root, and basmati rice. Sauté for a few minutes until vegetables are soft. Use your fork to gauge the softness of the vegetables.
  3. Add chicken broth to the mixture and bring to a boil. Reduce heat to low and simmer for 30 minutes.
  4. Add chicken back into the pot and simmer for an additional 15 minutes.
  5. Add your salt and pepper to your desired taste. 

Serve hot and enjoy!

Shrimp and Broccoli Clay Pot Recipe

Ingredients

  • 12 x shrimps, peeled and deveined
  • 1 x fresh broccoli florets (if frozen then steam-cook beforehand)
  • 2 x chopped garlic cloves
  • 1 tbsp. x mashed ginger root
  • 1 cup x vegetable broth or chicken broth
  • salt and pepper to taste

Instructions

  1. Using a medium clay pot, sauté shrimp, broccoli florets, garlic cloves, and ginger root in olive oil over medium-high heat until shrimp are pink and broccoli is slightly charred.
  2. Add vegetable broth or chicken broth and bring to a boil. Reduce heat to low and simmer for 15 minutes.

Slow Cook Chili Con Carne Recipe

Ingredients

  • 1 x grated onion
  • 1 x finely chopped green bell pepper
  • 2 x mashed garlic cloves
  • 1 cup x vegetable broth or water
  • 1 tin x canned diced tomatoes
  • 1 tin x canned kidney beans
  • 1 tin x canned black beans
  • 1 x tin canned corn
  • 2 tbsp. x chili powder
  • chopped Dayna/coriander for garnish
  • salt and pepper to taste

Instructions

  1. In a medium or large clay cooking pot, sauté onion, green bell pepper, and garlic cloves in olive oil over medium-high heat until softened.
  2. Add vegetable broth or water, diced tomatoes, kidney beans, black beans, corn, and chili powder. Stir to combine.
  3. Cover and cook on low for eight hours or on high for four hours.

The perfect meal to cook when you have other things to do around the house. This is one of my personal favorites as the combination of ingredients gives an explosion of wonderful tastes.

Clay Pot Roast Recipe

Tasty and chunky pot roast clay pot recipe, with a few vegetables mixed in.

Ingredients

  • 1 x beef chuck roast
  • 1 x chopped onion
  • 3 x garlic cloves
  • 3 x diced carrots
  • 1 x cup vegetable broth or water
  • salt and pepper to taste

Instructions

  1. In a medium clay pot, brown beef chuck roast on all sides in olive oil over medium-high heat. Remove from pot and set aside.
  2. To the same pot, add onion, garlic cloves, carrots, potatoes, and vegetable broth or water. Stir to combine. 
  3. Add beef chuck roast back into pot and cover. Cook on low for four hours or on high for two hours.

Serve hot and enjoy!

Braised Chicken Thighs Pot Recipe

Ingredients

  • 4 x chicken thighs bone-in and skin-on
  • 1 x onion
  • 2 x garlic cloves

Instructions

  1. In a large clay cooking pot, sauté chicken thighs in olive oil over medium-high heat until golden brown. Remove chicken from pot and set aside.
  2. To the same pot, add onion, garlic cloves, carrots, celery, and vegetable broth or chicken broth. Stir to combine.
  3. Add chicken back into pot and cover (season with salt and pepper to taste at this point). Cook on low for four hours or on high for two hours.

Ingredients

  • 2 cups x Arborio rice
  • 1 x onion
  • 2 x garlic cloves
  • 1.5 cups x vegetable broth or chicken broth
  • 125ml x white wine (if you choose to)
  • 4 dollops of butter
  • 1 cup x grated parmesan cheese
  • salt and pepper to taste

Instructions

  1. In a medium clay pot, sauté onion and garlic cloves in olive oil over medium-high heat until softened.
  2. Add the Arborio rice and stir to combine.
  3. Add vegetable broth or chicken broth and white wine.
  4. Bring to a boil. Reduce heat to low and simmer for 20 minutes, stirring occasionally.
  5. Add butter and grated parmesan cheese. Stir to combine.
  6. Add salt and pepper to taste.

Clay Pot Baked Fish Recipe

Lovely tomato clay pot baked fish recipe, with parsley and rosemary for added flavor.

Ingredients

  • 4 x fish fillets, such as salmon, cod, or halibut
  • 1 x onion
  • 2 x garlic cloves
  • 1 cup of vegetable (tomato) or bone broth
  • 2 finely chopped medium-sized tomatoes
  • dried herbs (parsley and rosemary)
  • salt and pepper

Instructions

  1. In a medium-sized clay cooking pot, sauté onion and garlic cloves in olive oil over medium-high heat until softened.
  2. Add the 2 finely chopped medium-sized tomatoes.
  3. Add fish fillets and vegetable broth or bone broth. Bring to a low boil.
  4. Reduce heat to low and simmer for 15 – 20 minutes, or until fish is cooked through.
  5. Sprinkle dried herbs over a meal while hot.
  6. Add salt and pepper to taste.

Serve hot with rice or your favorite bread and enjoy! 

Another option is to prepare the fish in the oven using aluminum roasting pans and have it as an accompaniment with the broth.

RECIPES FOR UNGLAZED CLAY POT COOKING

Unglazed Pot Chicken Recipe

  • 1 whole chicken, cut into pieces
  • 1 x onion
  • 1 x large potato
  • 3 x garlic cloves
  • 5 x dried baby tomatoes
  • 1.5 cups x vegetable broth or chicken broth

Instructions

  1. In a medium unglazed clay cooking pot, sauté chicken, onion, and garlic cloves in olive oil over medium-high heat until the chicken is browned.
  2. Add vegetable broth or chicken broth. Bring to a boil.
  3. Add potato and dried tomatoes
  4. Reduce heat to low and simmer for 30 minutes. 
  5. Add salt and pepper to taste.

Serve hot with fresh bread, and enjoy!

Clay Pot Beef Stew Recipe

A chunky and tasty beef stew recipe, cooked to perfection using a clay pot.

Ingredients

  • 1 x beef chuck roast, cut into cubes
  • 1 x onion
  • 2 x large potato
  • 2 x large carrots

A traditional clay pot rice recipe, using peas and corn as a nice vegetable option.

Ingredients

  • 2 cups x long grain rice
  • 1 x onion
  • 2 x garlic cloves
  • 5 x cloves
  • 1/2 cup of peas
  • 1/2 cup of corn
  • 2 cups x vegetable broth
  • salt and pepper to taste

Instructions

  1. In a large clay pot, sauté onion and garlic cloves in olive oil over medium-high heat until browned and soft.
  2. Add long-grain rice and stir to combine – do this for 1-2 minutes.
  3. Add vegetable broth and bring to a low boil.
  4. Add the peas and corn.
  5. Reduce heat to low and simmer for 30 minutes, stirring occasionally.
  6. Add salt and pepper to taste.
  7. As an extra option, you can prepare meatballs with some toasted cashews.

Clay Pot Split Pea Soup Recipe

A tasty split pea soup cooked using an unglazed clay pot for added earthen flavor.

Ingredients

  • 1.5 cups of dried split peas
  • 1 x onion
  • 2 x garlic cloves
  • 4 cups x bone broth
  • 1.1 lbs. of chopped bacon
  • 1/2 tsp of turmeric powder
  • 3 x celery stalks
  • 4 x medium carrots
  • salt and pepper to taste

Instructions

  1. In a large unglazed clay cooking pot, sauté the onion, garlic cloves, carrots, and celery stalks in olive oil over medium-high heat until softened.
  2. Add the chopped bacon and turmeric. 
  3. Soak the split peas for 30 mins before adding to the cooking pot.
  4. As soon as the split peas have been added, follow through by adding the bone broth.
  5. Leave to simmer and cook for 3-4 hours on low heat.
  6. Add salt and pepper to taste.
